well because imo the ball tracking representation isn't ideal and in truth there should be a cone of uncertainty around the projected point of impact. with those, i think the cone of uncertainty would actually have it as fairly uncertain that the ball is hitting the stumps and in such cases it should be not out.This happens a lot less often than the other instances where like 30% of the ball is smashing into the wickets.
And last I checked nicking the corner of leg stump is still out.
It just makes zero sense to go back to rely on an inferior method to make a decision after the time has already been taken to go through the superior method. Unless there are specific instances where an umpires judgement is better than ball tracking, I just don't see the logic.
