Australia has great food. High quality meat, seafood and produce that requires a lot of skill to handle. There isn't a need for much tinkering because the quality of ingredients is what people want to taste.They do amazing desserts as well. Masterchef Aus is one of the best cooking shows out there.

A lot of non-Japanese Asian food is the opposite. Cheaper ingredients that are masterfully combined to create flavours that are unparalleled in terms of permutations and combinations.

Both are amazing and both require vast amounts of skill. Neither is superior to the other. It's all subjective.

Do you mean come to Hong Kong? I've been. It's all right. Not great, but ok. Sort of a higher rise Parramatta Road between Homebush and Ashfield.

Or did you mean come to India (as it's an Indian restaurant)?

It's astounding the intellectual dishonesty in complaining about people not eating "exotic" desserts and saying they have limited culinary tastes, then getting the shits when people experiment and create their own takes on different types of food.
There's a difference here tho that you're missing.

What are you experimenting with different types of food for? Is it to take something complex and new and foreign, and then simplifiy it down to something familiar (with a twist)? For example, people might not like Red Bean, lets take the essence of the Red Bean and pack it into a Cheesecake. In that case, sure, it has a purpose. It's training wheels to introduce people to new flavors. It's a great tool with which to teach people about a new cuisine. But by and large that's not something that will excite me.

However, what if you were to take two different food cultures, and mash them up as equals. Not dumbing X down to suit Y audience. But making them both equal partners of the same dish. Two flavours that you won't normally find paired together, but now we're doing it and going at it full steam. Like Indian Chinese food. Desi Chinese. Chinese ideas of cooking but done with Indian ideas of flavours. That has spawned off a whole new cuisine in of itself, one that is strange and new and exciting, but so good if of itself. Or lets think about how Italian American food has come about - Italian techniques, Italian sensibilities, but American ingredients and flavors.

Things like that I do embrace, and encourage. Great food cultures should be mixing together all the time. It's wonderful. When I was in Dubai my friend took me to this place that was super high end Japanese/Middle Easter fusion. It was absolutely incredible. Proper cooking, done well with good ingredients and good ideas behind them.

But when you tell me that your idea of good Asian dessert is Fried Ice Cream and I need to respect that because you're going with Mango Flavoured Ice Cream and this is so weird an exotic...no. Just no. Go to Asia, have some real good Mangoes, and then have some red bean soup. That's way better that this training wheels bullshit. You're a grown adult who has traveled the world and lived a full life. ****ing eat like it.

The problem with Australian curries & versions of Indian food is you aren't stuck on the s***ter for 3 days afterward, get admitted to hospital, spend a week in ICU and given special antibiotics ordered from Sweden and require 6-8 weeks of physical rehab afterwards. Clearly not authentic.
Fusing Indian and NZ/Aus/English food has resulted in one good thing.

For me that would be the curry steak pie at my local Cambodian baker.

I won't do the butter chicken - too 'white af' for my liking.

If I am at an Indian restaurant and I ask the waiter what he recommends, if he says Butter Chicken, I feel like replying "Oh no - I can eat and enjoy real Indian food now give me a Sehgwalla hot.

But not Indian hot, domestic hot, and not because I have any issues eating it. Issues happen later.
