Looking at the runs scored in that game I'll have to go with Holding. The Kennington Oval must've been pancake flat, so a tremendous effort to pick up the wickets he did.

It's not as clear cut as it first looks - WACA with new ball + Ambrose was always going to end in lots of wickets, and White did eke out a 12-run win single-handedly on quite a good wicket (since Australia held out for one and a half days). Still, Ambrose for shock factor.
