Don't they make up for lost overs later in the day in the UK because it's light so much later over there at the height of what passes for summer?
The light at 10:30 to 11 is exactly the same. Nothing to stop them making up time at the start of the day and end of the day too.

Normally tests in England in Ashes go into August when the light has started to go other way. As the longest day is the 21st June.

So by 630-7pm which games have been known to go and even after 7 the light isn't as good then.

I think with modern bats a regular third man is probably about right. But either way, we need a fielder there and should make absolutely sure to stick to one side of the wicket. But it's an irritating trope of Australian cricket to leave that area open.
