Isn't a lot of what we consider "Chinese food" in the West -- i.e. westernised Cantonese cuisine -- basically what HK cuisine is, except more British?
It will generally have its origins in the Guangdong area but adapted for Western taste buds. And Guangdong cuisine is essentially Hong Kong cuisine (Hong Kong wasn't really a thing until the British claimed the port).

But there are some Hong Kong foods that have arisen due to the British influence which aren't really Chinese food made British, but British food made Chinese I think
