What was the idea behind the extra fielding restrictions in the first place? Obviously, resctricting the fielding side, is a bonus for the batting side. But I can't see how cricket would benefit form giving the batsmen a bonus.

Every rule they introduce is an attempt to abolish the boring middle overs. Two new balls, only being allowed a maximum of four men outside the ring, they're all an attempt to just stop sides only looking singles in the middle overs. They've successfully done it, however, now everyone is realising that guys just smashing boundaries for 50 overs isn't any less boring.

In fairness to the rule makers they do try and keep a balance between bat and ball. For all the advantages gained by two new balls in the SC, there's plenty of help for seamers elsewhere in the world, and part of the new fielding changes was removing the bowling popwerplay. Unfortunately the latter hasn't really done much compared to the four outside the ring.
