Paul Harris was a seamer before switching. Apparently it was because he had issues with his wrist when delivering the ball.

Johan Botha is the obvious one. He was bowling his lollipops into his 20s.

Add Manoj Prabharkar in the list please and I believe he was the only one to do so within one match too (If I am not mistaken ) .. Do you remember the 1996 Quarter Final match between India and Srilanka .
Afridi though tried medium pace along with his leg spin in the same match against India .

Philip Defrates did the same in Quarter final against SL. He was eviscerated by Jayasuriya. India vs SL was not a quarter final, it was a legue match.

This is essentially correct - they were both seamers originally but were told by the Surrey coach that if they wanted to play in the same side one would have to change - Eric, apparently, was a decent spinner as well whereas Alec wasn't hence the switch as they weren't prepared to contemplate being separated.
Yep. In fact in club games Sir Alec would be bowling, after 3 balls he would toss the ball to Eric to complete the over, to which all and sundry would be none the wiser that Eric would be bowling, and it was noted on the skills of Alec to turn from bowling pace to bowling off spin for the rest of the over.

I remember that bit from his autobiography that I read 6 or 7 years ago.

I remember Scott Styris announcing that he was switching to off-spin, though he soon must have realised he was crap at it.

In his youth Bill Edrich was a distinctly sharp quick bowler in the Malinga/Thommo mould and had a degree of success - he had some injury problems in the late 40's and in the latter part of his career when he bowled it was off spin (with little success)

I vaguely remember Zaheer khan bowling left arm spin for an over or two in some test match.
Haha, yep, one of several infamous games at the old ARG. This particular one being in 2002.

I myself rather loved the commentator's description of the "cricket" around that time:
Chanderpaul had done his job much much earlier, effectively batting West Indies out of trouble, it defies every spirit of this wonderful game for him to go on blocking even full-tosses
Guess even someone like Boycott would have scored faster than this, it has been part-time bowlers for a long while now, Chanderpaul should have played a few shots... it is not to be.

Afridi opened the bowling in a test match against India once, and didn't have the best of returns. However with some work in my opinion he could change to pace quite successfully. He has a good bouncer, great seam position, and some swing. And he can crank the pace up in the low 130's, which is not bad for a leg spinner.
