That stat tells u that, in the innings McGrath got X batsman out, what was the average of batsman X (against all bowling combined).

Yeah it's worthless, you can dominate and slap a bowler aroud for 1000 runs all career, and then get out at 0 to the same bowler, the stat would show that your average against him was 0, no regard for the 1000 runs smacking
