My team have 3 keeper-batsmen so far, how to categorize who fits into the 'WK' slot?

Everyone is categorised prior to the draft (see long list on first page) so that's what we go with.

In your case Latham was classed as an opener since he does it in tests, probably with more success than as a white ball player imho.
Pooran is a middle order bat for WI, leaving Pant in the WK slot.
