For me,
Australia vs WI 1997 3rd test
espncricinfo.com/series/west-indies-tour-of-australia-1996-97-61894/australia-vs-west-indies-3rd-test-63731/full-scorecard

The weather was set fair, in the heavenly weather and surroundings of Australia, with good heat, no humidity, and absolutely no rain.

The pitch was hard, nice, fast, and bouncy, with absolutely zero lateral movement. The batsmen hit through the line if they had good hand-eye coordination.

This match was essentially a contest between GD McGrath and CEL Ambrose, as to who could get more bounce, zip, nip and life out of a flat, fast, bouncy pitch - an exericise in cricketing Valhalla.

Cricket Web: All-Time Legend
I recall following this match just through newspaper (good old days). Ambrose had a couple of quiet matches and before this match he declared he would take 10 wickets. ****y guy only took 9.

Concurrently, India was playing against South Africa at Durban. Donald also took 9 wickets in a performance that made a huge impression on me. I however recall being very proud that while both those legends failed to take 10, new Indian "star in the making" Venkatesh Prasad took 10.

Prasad went on to win some Ceat cricketer of the year award that season, leaving behind Wasim Akram in their point system.
