I wouldn't say the bowling of the English during Richards' 189* looks exactly crash hot from what's available. Rather similar to the Afghanistan they started very well when the ball was moving around and then bowled rather ordinary length - and often too much to leg - against a batsman who was really laying into that kind of bowling.
Another thing to consider is that big scores like 189/175 were unheard of in those days. Look at the highest scores, you might barely see 2-3 innings at best from the 80s in top 100(hope I am right about this :p ). Not saying that it places Viv or Kapil's innings above Maxwell's, but it makes it much more difficult to compare coz those two had played innings that were beyond imagination in their times.

Those innings were amazing for the times. Does the issue of them being 60 over games change anything in how they are rated. They might have only been 150abouts in 50 overs. Still amazing for the times, but the 60 overs thing bugs me. Should it?

Agree. It should. And that is what makes it extremely tough to get a definitive answer on this. All these innings were freakishly good, just extra-ordinary for their time. But they're played in totally different versions of ODIs - one being closer to tests and other being closer to T20s.
