Old Trafford in 2005, despite being a draw.
And the deciding test in SA 2004/2005 - Trescothick's quite astonishing innings setting up the opportunity for Hoggard to blow them away in a couple of sessions.

The final days of both of England's series in 2000/2001 were memorable, especially as they decided the series as well as the matches. In both cases, the home teams collapsed on the first half of the final day. Pakistan's collapse was entirely unexpected as the pitch looked pretty blameless. The chase wasn't a huge one, but it was memorable for being completed in the dark. SL was different as the pitch was doing all sorts. As memory serves, England bowled out SL in a session and a bit, the target was only 70 or so, but we only got there because Thorpe had become an absolute master in those conditions. His unbeaten 30 something was one of the great sub-50 innings.

England with Prior sneaking an unexpected draw in 2013 against NZ
A couple of Tests between England and NZ were decided late in the final session a couple of years back

NZ producing steamy roads that never disintegrate results in some terribly dull draws but some interesting finishes as well.

Australia bowling out Pakistan in two sessions on a flat pitch in a rain affected game in around 2016 was also fun.

that was a sneaky underrated tour - the match at i believe the gabba where pakistan almost pulled off a chase of ~500 was madcap to the extreme too

IIRC in 3rd test of Pak vs Eng in 2016 , Pak was bowled out within 60 overs on Day 5.

The Gabba this year was cathartic like few other cricketing experiences for me, rivaled only by Lara 153* before that. Something special about staying up watching these chases ebb and flow; everything around you has gone dead and you feel like you're privy to incredible events happening.
