Well **** me, I won't go to the Encyclopedia Britannica anymore, I'll consult the chef who writes out the specials board at The ****man's Hotel in Carlton.
I wouldn't advise that.

Also it wasn't the Specials board. It was the main menu, printed and in a nice booklet etc.

I also don't think the Chef would have made the menu, rather the owner.

Just had a parmigiana for lunch at The Corkmans Pub in Carlton..

The pub had "Chicken Parma" written on the menu. Yeah that's right, on the menu. Not parmigiana.

well that settles that.

History

Eggplant was introduced to Italy through Sicily and the south, and the dish is claimed by both Campania and Sicily. While "parmigiana" means "from Parma" (in Northern Italy), the dish is not part of Parma cuisine.
