Sachin 1996 WC and Kohli 2016 T20 WC are probably the 2 biggest examples of a batsman carrying his team at that level in a WC. But, which one was the bigger carry-job (and better performance, purely on batting)?

You should compare it with Kohli 2023 WC.

Kohli 2023 WC wasn't a Carry-job though. All of the batting line up did well. Rohit played at a similar level to Kohli imo and Iyer just a bit behind. All of the team played at a higher SR to Kohli as well. Sachin wins that one sided.

Matthew Hayden in 2007 was much better than Kohli in 2016. For a carry-job, Williamson in 2019 too. Martin Crowe in 92

96 AVG in a WC is extraordinary.

Kohli was extraordinary no doubt, but it was also easily the most batting friendly wc and more importantly Rohit and Iyer were extraordinary too, with Rahul and Gill pretty decent as well.
Sachin was carrying the run scoring as well as the SR. Kohli only had to worry about the run scoring.

Rohit striking at a rate of 125 and still making 600 runs is what allows the rest to play the way that it did. Rohit's importance is downplayed in the wc 2023 campaign.
Rohit 2023 >= Kohli 2023 is a hill I'm willing to go down on.
